Mum and I decide to make a pumpkin pie to cheer up Dad. He's feeling quite a bit better, but not great still. We collaborated on a no-sugar added, allergen free pumpkin pie. We have to make the crust from scratch, since I'm allergic to everything, and we had a bit extra so Mum got creative:



He ate a piece for breakfast this morning, so I think it was a hit.

Thank you! It was very tasty. It's a recipe my mom found in a magazine I think. My parents are both diabetic, so it's made to be as sugar-free as possible. And the pie crust recipe we found online. I have a lot of food allergies, so we tend to bake from scratch because store bought stuff so often has ingredients that don't make me feel great.
