I imagine Anna makes most things ahead and simply reheats and puts together for dinner, especially in the winter, when sunset is so early. She probably keeps it very simple in the winter, and does something more traditional when she has more time in the lighter months. The cooking rules on Shabbat are very specific, but it looks like you can put things in double boilers or on warming trays if they are already fully cooked. She might even be able to get away with putting a pot inside another pot and warming things up that way,
